It\u2019s a skillset she then translated in 2005 into her own Kalsen Studio &amp; Design, which specializes in working with companies in the fine dining and wine industries.<\/p> <!--[\/col]--><\/div> <div class=\"col-xs-12 col-sm-6\"><!--[col]--> <p>\u201cWhen you do menus, you\u2019re always weighing options,\u201d Angela says. \u201cYou have to stay open, think about the environment it\u2019s in, how it\u2019s going to be used, how it\u2019s going to be read.\u201d It comes down to an exercise in user experience, a term usually applied to digital environments. \u201cWine lists, especially, can be tricky. An early iteration of the custom menu used a cover with a linen finish, which was beautiful but a poor pairing with greasy fingers from Red Cow\u2019s burgers and fries.<\/p> <p>&nbsp;<\/p> <p>Next, Kallsen suggested a synthetic <a href=\"https:\/\/smartpress.com\/support\/stocks-substrates\/small-format-paper-stocks\">paper stock<\/a> for the cover. \u201cIt was perfect for resisting grease and stains.\u201d But then the next challenge. Red Cow decided to bring down the menu\u2019s page count, and the synthetic cover was too heavy to fold around the reduced number of text pages. \u201cWe finally opted for a lighter, <a href=\"https:\/\/smartpress.com\/support\/stocks-substrates\/text-weight-vs-cover-weight\">100# cover stock<\/a>. She then filled the 48-page drink menu with quotes, recipes and backstories on the cocktails and wines it features. Designing a menu that can withstand guests\u2019 handling, as well as changes in the kitchen, is as much an exercise in testing materials as it is in developing good design systems. \u201cCocktail and wine lists change seasonally,\u201d Kallsen notes.<\/p> <!--[\/col]--><\/div> <div class=\"col-xs-12 col-sm-6\"><!--[col]--> <p>\u201cThere have been changes in the order, the wording and the offering, but the look has remained pretty much the same.\u201d And with Smartpress&#8217; vast online printing services, making those changes is easy.
